Today, I really did not want to cook but the alternative was to order a take-away. It's Monday. Do I really want to start the week having a take-away? No.
So, I went to the kitchen and made the easiest meal that I could make. Egg curry. My mum used to make this when she also had nothing cooked and needed something quick rustled up to eat. Obviously my mum makes it better because she's just the best, but I'll give you my take on how I make it.

1. I boiled 8 eggs for 16 minutes.
2. In a pan, I added some oil and 1 sliced onion. After the onions became a little brown, I added some salt. I left to soften. I did add a little water as it was sticking to the bottom of the pan.
3. Then, I added half a tbs of turmeric powder, quarter tbs of chilli powder, 1 spoon of jeera powder, 1 tbs of daniya powder and a quarter of a tbs garam masala. I mixed and left for about 5 minutes. I stirred every now and again to prevent it from sticking to the bottom of the pan.
4. With a butter knife, I put a few lines down the eggs so that the flavours reach inside the egg a little. Then I put them into the pan with the curry sauce.
5. I added a little water so that it wasn't too dry. I then left it for about 5 minutes and then it was done.
6. Serve with some plain rice.
I made my rice in a rice cooker. 4 little cups of rice with 5 and a quarter cups of water. That ratio works for my rice cooker oddly. I read it in the little book that came with it.
You can add some coriander leaves as shown above. P.S that is not a picture taken by me. I forgot to take a picture after cooking it as I was too hungry.
